Peach Season is here Delicious homemade peach cobbler with a pastry crust

August is peak peach and berry season, so this dessert captures the sweetness of late summer fruit. Ingredients: For the filling: 4 ripe peaches, sliced 1 cup fresh blueberries (or blackberries) 1/2 cup granulated sugar 1 tbsp lemon juice 1 tbsp cornstarch 1 tsp vanilla extract For the topping: 1 cup all-purpose flour 1/4 cup sugar 1 tsp baking powder 1/4 tsp salt 6 tbsp cold butter, cubed 1/3 cup heavy cream (plus a little for brushing) For serving: Freshly whipped cream or vanilla ice cream Instructions:   Prepare the fruit filling Preheat oven to 375°F (190°C). In a large bowl, toss peaches, berries, sugar, lemon juice, cornstarch, and vanilla. Spread evenly into a greased baking dish. Make the topping In another bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter with a fork or pastry cutter until mixture resembles coarse crumbs. Stir in cream until dough just comes together. Assemble & bake Drop spoonfuls of dough over the fruit filling. Brush with a little extra cream for golden tops. Bake 35–40 minutes, until topping is golden and fruit is bubbling. Serve warm with whipped cream or vanilla ice cream.
