Chelsea Evans didn’t set out to reinvent brittle—but she did. Sitting down for an interview with CNG, she shared the story behind Honey Butter Brittle by Heavenly Delights Company, a small-batch treat that quietly breaks every expectation people have about brittle.

“Hello, I’m Chelsea,” she said with a smile. It was the start of a conversation about a brittle that defies expectation and rewards the adventurous snacker.

This isn’t the tooth-cracking, sticky brittle most people brace for. Chelsea describes it as “Homemade brittle, soft, creamy, easy to chew.” The texture is the first surprise—velvety and melt-in-your-mouth at room temperature, then intriguingly crumbly when chilled. From there, the flavors fan out boldly: chocolate, churro, peanut butter, and tajin, all made with peanuts. Seasonal flavors rotate through the year, too, including a strawberry milkshake and an upcoming butterscotch.

Chelsea has been perfecting her craft longer than most realize. “I’ve been making brittles since I was in middle school,” she explained, tracing it back to a science class experiment, a recipe her grandmother found, and a few tweaks that changed everything. The real turning point came years later, when she made it for Christmas despite her boyfriend’s doubts. “He kept going back and eating it… until he finally said, okay, this is really good, you have something here.” That moment sparked the push to turn a tradition into a business—especially because, as she put it, “it’s not like traditional brittle.”

Her personal favorite? “We have a house favorite, and that’s our churro because we really like cinnamon.” Still, she’s quick to defend the original. “You can’t go wrong with the honey butter one… it’s the classic.” At markets, she hears the same feedback again and again. “The complaint is, that all the flavors are so good, they don’t know how to choose which one to get.” It’s the kind of problem any maker would love to have.
