Ingredients

Begin by preparing the lemonade base on the stove to ensure the sugar dissolves fully. Combine water and granulated sugar in a saucepan over medium heat. Stir continuously until the sugar has completely dissolved. Remove the mixture from heat once it becomes clear. Allow it to cool slightly before adding citrus. This step creates a smooth base without graininess.

Add fresh lemon juice and lemon zest to the cooled sugar mixture. Stir gently until evenly combined. The zest adds aroma and enhances citrus flavor. Taste the mixture and adjust sweetness if needed. The lemonade should taste slightly stronger than desired since freezing dulls flavor. Let the mixture cool to room temperature before pouring.

Carefully pour the lemonade mixture into popsicle molds, leaving a small amount of space at the top. Insert popsicle sticks according to mold instructions. Tap the molds gently on the counter to release air bubbles. Air bubbles can create uneven texture. Place the molds upright in the freezer. Freeze until fully solid.

Allow the popsicles to freeze for at least six hours or overnight. Once frozen, remove the molds from the freezer and let them sit briefly at room temperature. Gently loosen the popsicles by running the molds under cool water. Pull slowly to avoid breaking them. Handle carefully as they soften quickly. Transfer to a chilled plate if serving immediately.

Lemonade popsicles are best enjoyed straight from the freezer. Store extras in their molds or wrap individually to prevent freezer burn. Avoid refreezing melted popsicles, as texture may suffer.
