Spiced Pear and Cranberry Crisp

Ingredients

For the Filling:

  • 4 large ripe pears, peeled, cored, and sliced
  • 1 cup fresh or frozen cranberries
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract

For the Topping:

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Lightly grease a 9x9-inch baking dish.

2. Prepare the Filling:

  1. In a large bowl, combine the pears, cranberries, sugars, cinnamon, ginger, nutmeg, cornstarch, and vanilla extract.
  2. Toss until the fruit is evenly coated. Transfer the mixture to the prepared baking dish.

3. Make the Topping:

  1. In a medium bowl, mix the oats, flour, brown sugar, cinnamon, and salt.
  2. Stir in the melted butter until the mixture is crumbly. If using nuts, fold them in.

4. Assemble and Bake:

  1. Sprinkle the topping evenly over the fruit filling.
  2. Bake in the preheated oven for 40–45 minutes, or until the top is golden brown and the filling is bubbling.

5. Serve:
Let the crisp cool slightly before serving. It’s delicious on its own or paired with a scoop of vanilla ice cream or a dollop of whipped cream.
