Ingredients

·         2 pounds boneless skinless chicken breasts or thighs

·         3 tablespoons olive oil

·         1/4 cup fresh lemon juice

·         Zest of 1 lemon

·         2 cloves garlic, minced

·         1 tablespoon fresh rosemary, chopped

·         1 tablespoon fresh thyme leaves

·         1 tablespoon fresh parsley, chopped

·         Salt to taste

·         Black pepper to taste

Begin by patting the chicken dry with paper towels to remove excess moisture. Place the chicken in a shallow dish or large bowl. In a separate bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, and parsley. Season the mixture lightly with salt and black pepper. Pour the marinade over the chicken and turn to coat evenly. Cover and refrigerate for at least thirty minutes to allow the flavors to absorb.

Remove the chicken from the refrigerator about fifteen minutes before cooking. This helps it cook more evenly. Heat a large skillet or grill pan over medium heat and lightly oil the surface. Place the chicken into the pan without overcrowding. Allow it to cook undisturbed for several minutes to develop color. Avoid moving it too early, which can cause sticking.

Turn the chicken once it releases easily from the pan. Continue cooking until the internal temperature reaches a safe level and juices run clear. Adjust the heat if the herbs begin to darken too quickly. Spoon some of the pan juices over the chicken as it cooks. This keeps the meat moist and reinforces flavor. Cook time will vary based on thickness.

Once cooked, transfer the chicken to a plate and allow it to rest briefly. Resting helps redistribute juices and improves texture. While resting, scrape up any browned bits in the pan and spoon them over the chicken. Taste and adjust seasoning if needed. Garnish with additional fresh herbs if desired. Serve warm alongside vegetables, rice, or potatoes.

Lemon herb chicken is best enjoyed immediately after cooking. Store leftovers promptly in the refrigerator and reheat gently to avoid drying. Avoid over marinating, as extended citrus exposure can affect texture. Always use a thermometer to confirm doneness. Adjust herb combinations based on preference or availability. With simple ingredients and attentive cooking, this dish remains fresh, flavorful, and dependable.
